Succulent, wonderfully browned and flavourful rissoles. And these do not require a drop of oil. Meat patties don’t get healthier than this.

There isn’t much you can do with chicken mince. So roll them and bake them into these healthy, delicious patties.

In a large bowl, mix these well together – 500 gms of chicken mince, 1 cup finely chopped cilantro (coriander leaves), 1 tbs ginger garlic paste, 2 crushed green chillies, 1/2 tsp black pepper powder, 1/2 tsp turmeric powder, 1 tsp cumin powder, 1 tsp garam masala, 1 tbs fenugreek leaves and 1 tsp salt.

Add 1/2 cup bread crumbs to hold the mince together and form into patties.

Place on a baking tray lined with parchment paper and bake for 30 minutes, turning these over when one side is browned.

Serve hot with a salad and bread. Or you may turn these into wraps or meat ball subs, with a dash of mayonnaise and fresh green fillings.

Note: You may add grated onions, carrots or zucchini to the patties mix. We prefer it plain, with all these herbs.
