Muffins bursting with the sweet taste of bananas – a little walnutty, with pockets of white chocolate. An outstanding combination of flavours.
These white chocolate muffins will have your kids talking, not only about how amazing they taste, but what a fabulous parent you are for baking them!
In a bowl, mash 3 bananas with a fork. Add , ½ cup unsalted melted butter, 2 large eggs and 1 tsp vanilla extract. Whisk these until well combined.
In another large bowl, sift these together: 2 cups of flour, 1 cup of white sugar, 1 tsp baking powder, 1 tsp baking soda and 1 tsp powdered cinnamon and ½ teaspoon salt.
Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in 100 gms of chopped walnuts.
For the frosting/filling: In a medium bowl, beat 2 cups of cream cheese until smooth. Add 3 cups of melted white chocolate, 1 tbs powdered white sugar and 1 tsp vanilla extract. Beat until well combined.
Fill each muffin liner halfway with the banana muffin batter. Add a spoonful of the white chocolate filling in the centre of each muffin liner. Top with more muffin batter until the liners are about ¾ full.
Bake for 20-25 minutes or until a toothpick inserted into the centre comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
If the frosting is too thick, add heavy cream 1 tablespoon at a time until desired consistency is reached.
Frost the cooled muffins generously and sprinkle with chopped walnuts or skittles or even M&Ms.
