All you need – fresh Mediterranean veggies, some olives, a nice chunk of feta and a simple dressing.
This classic salad takes just a few minutes to prep and toss together.
Classic Greek salad or Horiatiki is generally made with tomatoes, cucumbers, onion, feta cheese and olives and dressed with herbs and olive oil.
Prep, chop and combine 1 cup red onion, 1 cucumber, 1 green bell pepper, 1 yellow or red bell pepper, 1/2 cup whole olives (black or Kalamata olives work great), 1 cup cherry tomatoes, cut into halves and 1/2 cup feta cheese, crumbled.
Cut your ingredients into pieces of the same size.
For the salad dressing: Whisk together 2 tablespoons extra virgin olive oil, 1 tbs freshly chopped parsley, 1 tbs honey, 1 tbs red wine vinegar, 2 tbs freshly squeezed lemon juice, 1/2 teaspoon dried oregano, 2 cloves of garlic, minced, 1/4 teaspoon sea salt and 1/2 teaspoon crushed black pepper.
Pour the dressing over the salad and toss well.
You could add a few mint leaves for garnish.
This salad can be stored for a couple of days.
But do NOT add the dressing (store it separately, in another jar) until ready to serve.
