Cobb Salad is hearty and filling, and a little bit decadent as far as salads go. And yes, it was actually named after a person.
Robert “Bob” Cobb, owner of the popular Brown Derby restaurant on trendy Wilshire Boulevard, tossed a little bit of this and a little bit of that into his salad, such as leftover hard-boiled eggs and roast chicken and an American classic was born.
Make homemade dressing by throwing 1/3 cup red wine vinegar, 1 tbs mustard, 1/2 cup olive oil and season with salt and pepper.
Shake it well.
On a large platter, spread out 1 head Romaine lettuce, coarsely chopped. Add rows of 2 thinly sliced avocados, 5 hard-boiled and chopped eggs, 350 grams boneless and diced cooked chicken, 8 slices of cooked and crushed bacon, 150 grams of crumbled blue cheese and 8 halved cherry tomatoes.
Season with salt and pepper, drizzle with dressing and garnish with 2 tbsp. finely chopped chives.
