Curd Rice, also known as Thayir Sadam, is a cooler for your scorching summer days. It is a South Indian dish made with soupy rice, yoghurt and tempered with Indian spices.
Let’s start simple. All you need is yoghurt, white rice and some spices.
Wash and soak the 2 cups of white rice. Cook well.
Into a pan, add. 1 tablespoon coconut oil and temper with a pinch of cumin, 2 cloves garlic, 3 whole dry red chillies, 1/2 tsp black mustard seeds and a sprig of curry leaves.
Add 5 chopped red shallots (or 1 small chopped onion) ½ tsp minced ginger and sauté.
Add 2 cups finely whisked yoghurt and stir well.
Add cooked rice, salt and mix well.
Serve with an Indian pickle.
