We love sunshine, lemon and yellow flowers. This one combines all three. Perfect for a summer tea. Perfect for all the ones who bring sunshine into our lives.
Make pastry dough: Mix 2 cups flour, chunks of cold butter 100 gm, vegetable shortening 100 gm, a pinch of salt and rub together to form a coarse meal.
Pour ice cold water little by little, to form a dough. Spread the dough on a mat and cut into daisy shapes using a cookie cutter. Put these into a muffin tray and bake.
For the lemon curd filling: Mix juice of 3-4 lemons, 1/2 cup water, 1 cup sugar, 2 eggs and 2 tbs corn starch. Beat well.
Double boil the mixture, stirring all the while, so you don’t get lumps. Strain and cool.
Pour the lemon filling into the centre of the tarts. Dust with icing sugar.
