This one is for our friends who want a taste of this popular dessert, but don’t eat eggs.
Whisk together 3/4 cup thick set yoghurt, 1 cup granulated white sugar until the sugar dissolves. Add 1 tsp vanilla extract and whisk again.
Melt 50 gms of butter. Add 150 gms of dark chocolate broken to pieces. Whisk well until the chocolate melts. Add the yoghurt mix to the chocolate mix and whisk well.
Add 1/2 cup of broken cashew nuts. Into a large mixing bowl, add 1/4 cup cocoa powder, 1 cup flour, 1/2 tsp salt, 1/2 tsp baking powder and 1/2 tsp baking soda. Sieve these together.
Pour the cocoa mixture into the flour mixture and whisk until blended, but do not over-mix.
Pour into a baking tray lined with parchment paper. Gently push tiny chunks of dark chocolate evenly into the batter in the tray.
Bake for 25 minutes until the top is crackly. Serve warm with a scoop of vanilla ice cream.
Or after cooled, pour chocolate syrup on top, dust with cocoa powder and serve.
