If you want to learn how to make homemade apple pie filling, this is really the only recipe you need. An apple pie with sweet apples in a spiced sauce, baked inside a flaky, golden-brown crust.
For the pie crust: Measure 2 cups of flour into a large bowl. Add 1/2 tsp salt. Mix well. Add cold chunks of 200 gm butter and enough ice cold water to get a soft, firm dough (You can see the butter pieces in the dough)
Roll it out rectangular shape into a work surface. Fold into a letter. Roll out. Fold into 3 again. Repeat 6-7 times. Refrigerate for minimum 30 mins before use (Can be refrigerated for 3 days. Or frozen for a week)
Filling: Peel, core and slice 5 apples (we used Granny Smith apples) Toss them in 1 tbs lemon juice.
Preheat oven. Melt 250 gms butter in a saucepan. Stir in 1/2 cup plain flour. Add 2 tbs water. Mix 1/2 cup white sugar and 1/2 cup brown sugar well.
Add to the pan and bring to a boil. Add 1 teaspoon ground cinnamon, 1/4 teaspoon ground ginger and 1/4 teaspoon ground nutmeg. Simmer.
Cut the pie dough into two. Roll out the first half of the pie dough on to a lightly floured work surface or parchment sheet.
Place the pie dough in your pie dish carefully without stretching it. Fill with apple slices. Gently pour in the spicy sauce.
Roll out the second half of the dough over the pie dish and then trim, flute and seal the edges..
You could have a lattice design pie crust or top with few more apple slices if you want.
Bake for 35 to 45 minutes, until the apples are soft.
Serve with whipped cream or vanilla ice cream.
