Preheat your oven to 400°F (205°C). 2. In a food processor, combine 1 cup all-purpose flour, 1/2 cup finely grated Parmesan cheese – 1/2 tsp baking powder, 1 tsp onion or garlic powder, 1/2 tsp salt , 2 pinches of ground black pepper and 1 tsp dried rosemary . Pulse until well mixed.
Add 4 tbs cold butter chunks and pulse until the mixture resembles coarse crumbs. While pulsing, gradually add 4 tbs cold water, one spoon at a time, until the dough begins to hold together. Adjust the water as needed.
Transfer the dough to a lightly floured surface. Gather it into a ball and flatten it into a disk.
Roll the dough out between two sheets of parchment paper to around 3 mm thickness. Lightly dust the surface with flour if it sticks.
Slice the dough into 1-inch wide strips, then cut perpendicular to make 1-inch squares or cut out small rounds. Carefully transfer onto a baking sheet.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden and crispy.
Note: Try substituting with cilantro, thyme or sage if you like to experiment with different flavours.
Enjoy your delightful Parmesan rosemary crackers; these are perfect for snacking or serving with your favourite dips.
