Mexican fritters that people queue hours for – Churros!
Cook up authentic churros that people will rave about. Piping hot, straight from the fryer; not the ones you get at Costco.
In a shallow bowl, mix together 1 cup sugar and 1 tbs powdered cinnamon. Set it aside.
In a saucepan, melt 100 gms butter.
Add 2 cups water, 1 tsp salt, 1 tbs vanilla extract and 2 sticks of cinnamon. Boil. Remove the cinnamon sticks.
Add 2 cups flour and stir with a wooden spoon until you get a a smooth dough.
When the dough cools, add 1 large egg and mix in well.
Transfer dough to a piping bag fitted with a closed star tip (using a piping bag with a Wilton closed star-tip will give you the churros’ classic ridges) Set aside.
Heat oil in a shallow pan. Hold the piping bag above the oil and pipe 5-inch long pieces of dough.
Fry them until golden brown, flipping them over with a spider strainer.
Repeat with the remaining dough in the piping bag.
Transfer to paper towels to drain them of oil, then transfer to the bowl containing the cinnamon-sugar mixture and toss well until evenly coated.
