Mediterranean Grilled Chicken

The best and easiest marinade ever – no-fuss and packed with so much flavour! We usually save some boneless pieces of chicken saved, just to make this.

You can use leftovers for a chicken n lettuce tortilla wrap too. So easy to make, yet so unbelievably tasty.

Marinate 1/2 kg boneless chicken cubes in: 1 tbs olive oil, 1 tsp minced garlic, 3 tbs fresh lemon juice, 3 tsp crushed black pepper, 1tsp dried oregano and salt.

Sprinkle 1 tbs Piri Piri powder. Mix well. Set aside for half an hour. Grill on a pan or in an oven.

To prevent the chicken pieces from drying out, sprinkle some water at intervals.

Serve on a bed of fresh green salad or baked vegetables.
