Fudgy, gooey and oozing with chocolate. And easy-peasy to bake. The perfect late night single-serving dessert too.
Bake this when you or someone you love needs a yummy dessert that’s ready in less than 10 minutes!
Take a large sturdy coffee mug. Add 2 tbs butter. Pour 2 tbs boiling water. Add 2 tbs cocoa powder. Add 4 tbs sugar. Whisk well. Add 2 tsp vanilla extract.
Then add 4 tbs flour, 2 pinches of baking powder. Mix well. Into the batter, squeeze in 4 small chunks of chocolate.
The trick with mug cakes is to stop cooking the cake earlier than you think, because you want it to be soft on the inside, and the cake will also continue to cook as it cools. So, just microwave for 1 minute, maximum. Allow for the cake to rest in the microwave for another 1 minute. Voila! Done.
Note: Each microwave is different, so one cannot often predict a precise cooking time. Start with 70 seconds, wait 1 minute while it cools, then check if the cake has set. Bake for another 15 seconds, only if absolutely needed.
