Palm Sunday Fig Pudding

Its Fig Sunday and time to make a Fig Pudding!  Traditional food served on Palm Sunday include Fig Pudding, because Jesus ate figs when he entered Jerusalem.

The rich and the poor across the world eat figs as we mark the beginning of Holy Week. Markets are filled with figs on the eve of Palm Sunday, because traditionally Fig Pudding is made to mark the feast. Children would buy figs, bring them to their mums to make a Figgy Pudding.

Cream 1/2 cup of sugar and 1/2 cup softened butter well. Add 1 cup of bread crumbs and 1/2 cup of milk. Mix well. Beat 4 eggs well and add this to the mix. Add 1 cup of plain flour. Add 3 pinches of salt. Add 1 tsp baking powder, 1/2 tsp baking soda.

Add 1/2 tsp pf ground nutmeg, 1 tsp vanilla extract, 1/2 tsp of ground cloves, 1/2 tsp of crushed cinnamon and 1/2 tsp of all spice powder. Mix well.

Add 1 cup chopped figs and 1 cup of raisins.

Pour the mix into a greased pudding mould (three-quarters full – not completely and cover tightly) or into individual ramekins and steam for two hours or bake in an oven for 25 mins.

Serve with lemon sauce, toffee sauce or whipped cream.
