If your heart melts like mozzarella in a wood-fired oven when you hear the word ‘pizza’, yet you can’t bake one because you don’t own an oven, try this recipe. A quick and tasty variation of pizza – made on a griddle or tawa or pan.
For pizza dough, take a large bowl, add 1 cup all purpose flour, 1/4 cup wheat flour, 1/2 tsp baking powder, 1/2 tsp baking soda, 1 tbsp oil, salt and 3 tbsp curd and mix all these well.
Then add water as required and knead it into a dough.
Knead for about 5 minutes until the dough turns very soft (but not sticky) Cover and set this aside for about an hour in a warm place. Meanwhile you can prepare the topping.
For the topping: Heat 2tbs sunflower or olive oil in a pan. Add 2 sliced onions, 1 large capsicum, few mushrooms (optional), 2 chopped small tomatoes, salt to taste, a pinch of chilli flakes and sauté well.
For making the pizza, divide the dough into 2 or 3 lumps.
Then roll each of these into round pizza bases. Now heat a large pan and place the rolled pizza bases on it. Cook one side properly, on low flame.
Turn those over to the other sides, again cooking on a low flame. Start spreading tomato sauce all over the breads, then spread the veggie mix evenly over those.
Grate 200 grams mozzarella cheese and sprinkle it on the top.
Cover and cook until the cheese begins to melt. Yummy simple pan pizza would be ready within minutes.
Cut the pizza into slices and serve immediately.
