Red Velvet Popcorn

Red Velvet Popcorn is a super cute Valentine’s Day treat for singles, families as well as couples. It’s a great snack to munch on during movie nights too.

Bake a red velvet cake (here is our recipe for Red Velvet Cake) or buy one. Cool the cake first and them crumble it – you’d need about 3 cups of crumbs.

Melt 2 tbs butter in a thick-bottomed saucepan on medium high heat. If you are using  oil, allow all of the solid oil to melt.

Put 2-3 popcorn kernels into the pan. Wait for the popcorn kernels to pop. When they pop, add 2 cups of corn kernels, 3 pinches of salt and spread them out evenly in the pan.

Cover the pot, remove from heat and count 30 seconds. (Count out loud with kids – its fun!) This method first heats the oil to the right temperature, then getting it 30 seconds off the heat, brings all of the other kernels to a near-popping temperature so that when they are put back on the heat, they all pop together. This way, nothing burns and nothing goes to waste!

Return the pan to the heat.  Once the popping begins, gently shake the pan by moving it back and forth over the burner, with the lid slightly closed (the steam escapes and leaves the popcorn crispier)

Once the popping slows remove the pan from the heat, remove the lid, and dump the popcorn immediately into a large bowl.

Melt 2 and half cups of white cooking chocolate or white chocolate slabs. Pour it into the bowl of popcorn and coat well.

Top popcorn with the red velvet cake crumbs and gently toss and mix, using a spatula, until the popcorn is well-dotted.

Let it sit until all the chocolate is completely hardened.

Break up popcorn gently and serve to oohs and aahs.
