We love recreating goodies and we didn’t think we’d ever be able to recreate our grandmothers’ recipes. Rosette Cookies are a delicious treat – so easy and fun to make that you might just get addicted!

Everyone at home likes snacks with their tea and we are not fond of store bought ones. If you get the hang of the process, you can make these at home.

Take 3 cups rice flour (Appam powder) in a dish. Add 3 cups thick fresh coconut milk to make a batter. Whip 2 large eggs and add. Add 1 cup white sugar, 1 tsp black sesame seeds and salt to taste. Whisk well to make sure there are no lumps.

Place two pans of oil side by side on the cooking range. Heat both. The smaller pan is to rest the rosette mould and the other larger one, for frying the cookies.

Rest the mould in the hot oil in the smaller pan for few mins. Then dip 3/4 of the hot mould into the batter and then place into the hot oil in the larger pan.

Shake gently and the cookie will fall into the pan. Immediately rest the mould in the smaller pan, to get it hot again.

Flip the cookie over to brown the other side evenly. Use up the batter to make more cookies, drain them on kitchen paper towels. Store in an airtight container.

Enjoy these for tea with friends. And you will be a star when they hear you made these at home.
