Pancakes are associated with Shrove Tuesday, the day preceding Lent, because they are a way to use up rich foods such as eggs, milk, and sugar, before the fasting season of the 40 days of Lent.

Apparently it’s tradition to make these Shrove Tuesday pancakes with unleavened flour, during the Lenten week. This one is easy, healthy and yummy.

Whip 1 egg, 2 overripe bananas, 1 cup oats (Or 1 cup wholemeal flour) in a mixer.

Add a dash of cinnamon powder and few drops of vanilla extract.

Add 1/2 tsp of baking powder. Whip well.

Warm a skillet and make the baby pancakes.

Drizzle maple syrup or honey over them, toss in some fresh berries and enjoy.
