Whether they’re coated in spicy herbs, sauced, breaded or fried crisp, wings are delicious anyway you spin ’em.
A simple sauce gives this game day chicken the best flavour. Make plenty, because they’ll disappear quickly – especially during parties.
Add 750 gms chicken wings to a bowl with 1 tbs baking soda. Pour a litre of hot water over them. That cleans them well. Throw away the water.
Add 1 tbs crushed black pepper and 1 tbs sweet paprika for seasoning, to the chicken wings. Add 1 tsp chilli flakes (Or not, if you like your chicken wings mild tasting – but then, they won’t be spicy chicken wings :O))
Into a large wok, add 3 tbs of butter. Add the chicken wings. Sauté well for 5 mins.
For the sauce: Add 3 tbs ketchup to a bowl. Add the juice of two lemons, 5 cloves of garlic chopped, 1 tbs yellow mustard paste and 2 tbs honey. Mix well.
Pour the sauce over the chicken pieces on the pan. Cover and cook for 15 mins, until the chicken is almost dry.
Garnish with chopped spring onions, fresh parsley or cilantro. Serve hot.
