May be it’s our craze for horses that made us probe for more info when we first heard about these Texan cookies.
They are absolutely scrumptious, loaded with oats, coconut, chocolate and nuts. The cookie jar would soon be empty.
Whisk together 2 large eggs, 2 cups brown sugar, 1/2 cup white sugar, 2 tsp vanilla essence and 1 cup melted butter.
Add 1 cup regular white oats, 1 cup shredded coconut (store bought, not fresh), 2 cups plain flour, 1 tsp baking powder, 1/2 tsp baking soda, 1 tsp salt, 1 cup cooking chocolate cut into chunks, 1 cup pecans (we used 1/2 cup chopped almonds instead) to a large mixing bowl and mix very well.
Drop chunks of the cookie batter on a baking mat, leaving spaces in between. Bake for 12-15 minutes.
These can be stored well in an airtight jar for a week.
